Summer in the Garden

Summer is a vibrant and lively season that brings longer and warmer days, more time for outside adventures and endless bountiful harvest baskets full of fruits, vegetables and flowers.

Here at Soul Farmer, our garden is overflowing with tomatoes, peppers, beans, strawberries and lots of leafy greens.

It’s such a wonderful time to eat directly from the garden!

Early summer is prime strawberry season and most kids love all things strawberry…

Not only can you eat them by the handful, you can make fresh smoothies, ice cream, cakes, popsicles, and roll ups.

One of our favorite go-to recipes is, Strawberry Greek Yogurt Banana Bread  from ClosestCooking

We love to make them in our planet box baking trays because they are the perfect size to pack in lunch boxes for picnics.  

Recipe: Strawberry Greek Yogurt Banana Bread

Prep Time: 10 minutes;

Cook Time: 1 hour

Ingredients:

  • 1 3/4 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 cup brown sugar

  • 3 large overripe bananas (mashed)

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1/2 cup Greek yogurt

  • 1 cup strawberries, sliced

Directions:

  • Mix the flour, baking powder, baking soda and salt in a large bowl

  • Mix brown sugar, bananas, eggs, vanilla extract, yogurt and strawberries in another large bowl

  • Mix the dry ingredients into the wet ingredients

  • Pour the mixture into planet box baking trays

  • Bake in a preheated 350F/180C oven until golden brown and a toothpick poked into the center comes out clean, about 30-45 minutes

    Now head out to the garden and have a wonderful time enjoying summer activities with your kids!

With the kids home for the summer we love a good garden scavenger hunt. Together we create a list of different things to find - plants, vegetables, leaves, insects and flowers. After the list is created, the kids head outside with a harvest basket, a notebook, and color pencils to check off items and draw other things they find.

It’s a great activity to nurture observation and appreciation of all things in the garden.
